Still, just because no one is singing our praises in the national press doesn't mean we aren't smoking a delicious piece of meat under the Big Sky.
That's right, we're not talking about some hot dogs or burgers on a bun at a backyard BBQ; these places are where they're smoking a brisket, possibly up to 24 hours depending on the size.
Slow and low is how these places do it. The way the flavor hits your nose when you walk in, any diet plans you might have had are out the window.
More Than Just Meat: Wood, Rubs, And Sides Matter
It's also not just the meat that makes a BBQ joint special; it's the type of wood they smoke with and whether they use a dry or wet rub, not to mention your choice of ribs, pulled pork, and the aforementioned beef brisket.
Then come the sides: creamy mac and cheese and baked beans reminiscent of grandmas cooking, along with warm cornbread topped with honey. All of it washed down with some sweet tea; my mouth's watering right now.
Highly Rated But Still Montana’s Best-Kept Secret
Just because we aren't high on the list of "best of" articles, it doesn't mean these places haven't been highly rated on food review websites like Yelp or OpenTable.
Besides, while it's nice to be recognized for the hard work these Pitmasters put in, for us patrons, it's also nice to have things that are our own little secrets.
