You can give them the money you think you'd spend, and they'll in turn buy you a Costco Cash Card, which is their version of a gift card, allowing you to then shop for yourself.
If, after you're done, you find that you saved more than $60, you should probably just buy your own membership.

So by using Instacart, you can shop at Costco; however, you might not be able to get the savings that a member would.
